For Ragda:
1. Soak dried white peas overnight in water.
2. Take 1 cup finely chopped onions.
3. Take 1 cup finely chopped tomatoes.
4. Add 1 tablespoon ginger-garlic paste.
5. 1 tablespoon red chili powder.
6. 1 tablespoon garam masala.
7. 1 teaspoon turmeric powder.
8. A handful of chopped coriander leaves.
9. Tamarind chutney.
For Pattice:
1. Take 3 boiled and mashed potatoes, and add salt to taste.
2. Add 1 tablespoon turmeric powder.
3. Add 1 tablespoon coriander powder.
4. Add 1/2 tablespoon chat masala.
5. Add 1 tablespoon cumin powder.
6. Add 1 tablespoon garam masala.
7. Add 1 tablespoon ginger-garlic paste.
8. Soak poha (flattened rice) in water, then drain the water and mix it with the potatoes.
9. Add a little sugar for sweetness.
Recipe Instructions:
To prepare Ragda:
1. Boil the soaked white peas in a pressure cooker with water, turmeric powder, and a pinch of salt. Pressure cook for 5 whistles or until the peas are soft and cooked well.
2. In a pan, heat oil and sauté finely chopped onions until they turn golden brown.
3. Add ginger-garlic paste and cook usually until it converts brown for a minute.
4. Add finely chopped tomatos and cook until they become soft and the oil separates.
5. Add red chilis powder, garam masala, turmeric powder, and salt as per your taste.
6. Mix well and cook the masala for a couple of minutes.
7. Add the boiled white peas to the masala and mix everything together.
8. Add water to adjust the consistency of the Ragda and let it simmer for a few minutes.
9. Finally, garnish with chopped coriander leaves.
To prepare Pattice:
1. Take the mashed potato mixture and shape it into round patties.
2. Heat oil in a pan and shallow fry the potato patties until they turn golden and crispy on both sides.
To serve:
1. On a serving plate, place two pattice.
2. Pour the hot Ragda over the pattice.
3. Garnish with chopped onions, chutney, and sev (crispy fried noodles).
4. Serve hot and enjoy the delicious Chatpati Ragda Pattice!
Important tips:
1. Ensure that the soaked white peas are not overcooked, as they may turn mushy.
2. Rinse the poha well and ensure it doesn't become too soft, as it adds a nice texture to the pattice.
3. If the Ragda becomes cold, you can add some hot water and reheat it before serving.
